National Biscuit Day 2021 | Icun Cookies with Banjo Robinson

Roll up your sleeves and get baking with Banjo this bank holiday weekend!

As you may know, Banjo is a fan of anything sweet: animals, compliments AND snacks! In terms of his favourite treats, there are many… We have it on good authority that he never travels anywhere without a good supply of profiteroles in his backpack, and he’s been known to dive head-first into a chocolate foundation and bake enough biscuits to feed a whole ARMY of cats! 

So to celebrate National Biscuit Day 2021, we’re revisiting one of Banjo’s favourite recipes: Icun cookies. He first tried this recipe in Somalia with his cat cousin Hani!

Ingredients

Method

  1. Grease a baking sheet, then get a big bowl and beat together 225g of unsalted butter and 106g of icing sugar until it’s lovely and light. Mix in 280g of all-purpose flour, 50g of ground almonds and 1/4 teaspoon of ground cardamom.
  1. Keep mixing until it you get a nice doughy lump and pop it into the fridge for an hour. When it’s cool, tear off small bits and flatten them between your hands, then space them out on the baking sheet.
  2. Decorate with a pretty piece of candied fruit on top and bake in the oven for about 15-20 minutes at 175 C until you’ve got lots of delicious cookies to share.
